MODULAR CERTIFICATE PROGRAM
Baking and Pastry Arts Modular Program Level 1 is made for aspiring pastry chefs. From this course trainees can expect to learn all the basic and fundamental skills and techniques that qualifies them to be part of the pastry industry.
This program is geared towards working professionals or hobbyist that would wish to have a basic knowledge in baking.
Trainees will begin the program learning baking essentials and safety sanitation procedures, followed by bread; laminated dough and puffy pastry making; quick bread and cookies; pies and tarts; cold and warm desserts; basic sponges and cream; petit fours and dessert buffets.
This program can also lead to a TESDA National Certificate II in Bread and Pastry Production.

The modules will cover the basic foundation and recipes of different cuisines within the four modules. This includes practical kitchen techniques, cooking methods, tips on proper knife handling, basic sanitation and lectures.
This Program is open to all individuals who wish to learn and would like to understand the Fundamentals of Cookery. The Program can lead to a TESDA NCII in Cookery .
Trainees will begin with a 1-day lecture session to provide the introduction to the whole program, food safety, then move on to the the cooking methods. Modules 3 and 4 will cover the fundamentals of Asian, Western and European Cuisines.
Trainees can choose different modules to take but are encouraged to start with module 1.
Group of students can also request for a special class regarding the cuisines that they like to take (minimum of 6 trainees per class)
