Modular Certificate in Culinary Arts (MCCA) (Fundamentals)

Program Description

The modules will cover the basic foundation and recipes of different cuisines within the four modules. This includes practical kitchen techniques, cooking methods, tips on proper knife handling, basic sanitation and lectures.

This Program is open to all individuals who wish to learn and would like to understand the Fundamentals of Cookery. The Program can lead to a TESDA NCII in Cookery.

Trainees will begin with a 1-day lecture session to provide an introduction to the whole program, food safety, then move on to the cooking methods. Modules 3 & 4 will cover the Fundamentals of Asian, Western and European Cuisines.

Trainees can choose different modules to take but are encouraged to start with module 1.
This program is in Partnership with The MARIQ Café + Restaurant, it will be held at the Extension Laboratory Kitchen of Academy Asia.

Group of students can also request for a special class regarding the cuisines that they like to take (minimum of 6 trainees per class).
